The quiche lorraine is one of the most famous dishes of the French cuisine. Luckily, it doesn't take a lot of effort to whip up this delicious pie (at least not if you stick to the original recipe, unlike me...).
Here's a simple and healthy version:
Crust:
- 1 dl wheat flour, 2 dl rye flour
- 1 pinch salt
- 50 g butter or margarin
- 4 ts water
Filling
- 150 g smoked ham of your choice
- 150 g cheese (I'm recommending feta cheese)
- 4 eggs
- 4 dl milk (if you opt for the not-as-healthy version, go for half cream half milk)
- 1 pinch black pepper, 1 garlic, 1 onion
How to:Crust: Mix flour, salt and butter, add the water and work everything into a smooth dough. Work the dough into a pie-form and prick the pie with a fork to prevent airbubbles. Bake the crust at 200 degrees C for about 10 minutes while you prepare the filling:Filling: Chop and caramelize your onion. Cut the ham and grate your cheese. Put the onion, ham and cheese onto the crust. Whisk the eggs, milk (and/or cream), add pepper and press a garlic head into the mix. Pour the eggmix onto the ham- and cheesemix. Bake the pie in the lower part of your oven for about 30 minutes (still at 200 degrees C.) Serve with a sallad of your choice.
