Ain't nothin' but a quiche




The quiche lorraine is one of the most famous dishes of the French cuisine. Luckily, it doesn't take a lot of effort to whip up this delicious pie (at least not if you stick to the original recipe, unlike me...).

Here's a simple and healthy version:


Crust:

  • 1 dl wheat flour, 2 dl rye flour
  • 1 pinch salt 
  • 50 g butter or margarin
  • 4 ts water

Filling

  • 150 g smoked ham of your choice 
  • 150 g cheese (I'm recommending feta cheese)
  • 4 eggs
  • 4 dl milk (if you opt for the not-as-healthy version, go for half cream half milk)
  • 1 pinch black pepper, 1 garlic, 1 onion
    How to:Crust: Mix flour, salt and butter, add the water and work everything into a smooth dough. Work the dough into a pie-form and prick the pie with a fork to prevent airbubbles. Bake the crust at 200 degrees C for about 10 minutes while you prepare the filling:Filling: Chop and caramelize your onion. Cut the ham and grate your cheese. Put the onion, ham and cheese onto the crust. Whisk the eggs, milk (and/or cream), add pepper and press a garlic head into the mix. Pour the eggmix onto the ham- and cheesemix. Bake the pie in the lower part of your oven for about 30 minutes (still at 200 degrees C.) Serve with a sallad of your choice.

There's just something about blue cheese and honey...


Enchilada garnished with super salty
blue cheese and sweet honey.
Perfectly combined with the savoury filling!


... which consisted of spicy Macedonian ajvar, chopped red onions, green peppers, procuitto, spices and a drizzle of EVOO (extra virgin olive oil)

Thai green curry with coconut milk and basil

Carrots, mushrooms, peppers, onion and baby corn sauteed in Ybarra olive oil (a fruity olive oil from Spain). Add some thai green curry & coconut milk, bring to boil then add fresh (or frozen) basil leaves. Yum!

A simple, healthy Thai dish for lunch, 
And quite easy on the eye as well  =) 


Serve with dark rye bread or a crunchy brushetta on the side for that "al dente" texture!

Pappardelle al pomodoro alla carbonara



Pasta alla carbonara literally means: 'the pasta of the coal miner's wife' in Italian and is one of my favorite Italian dishes.
There are as many versions of this recipe as there are pronunciations, and in all of them, raw eggs are added to the sauce and cooked with the heat of the pasta (this for me is the secret of the taste- no cream is necessary!). '

Bouillabaisse, à la minute!


Well, I don't know about the Bouillabaisse part but the tastes are very much the same. How incredibly easy to make, and what a taste! This is tortellini taken to a different level; and for a pasta & fish lover like myself, it's a match made in heaven.


How to

Boil some tortellini with optional filling to 'al dente' texture, (approximately 4 minutes). Drain all of the water and add some spiced tomato sauce (basil, garlic) or plain tomato sauce mixed with pesto. Let simmer and add just a splash of cooking cream for a richer sauce base. 

Here's where you go nuts with the spices: I used sweet paprika, mixed peppers and mediterranean salt (infused with rosemary among other things).

Taste the soup and adjust the tomato sauce, cream and spices til' you've achieved your desired textures and tastes.

Pour the tortellini + sauce into a bowl, serve with tunafish and garnish with some basil.

Bread Galore!


Pictures of lovely bread baked for dinner this Thursday! The bread is baked on a traditional serbian recipe for "lepinje", with a twist of crushed linseed.





To be enjoyed with a glass of well chilled watermelon juice... my new favorite beverage =)

Cheese rolls, falafel, lettuce, olives (garlic/ chilli filling), fresh cantaloupe melon and garlic cremé is all you need to make this wonderful dish. The combination of the savory rolls, sweet cantaloupe and spicy cremé is what highlights the tastes!

Dinner time!

Todays menu:
Balkan styled zucchini & potato pie with fresh vegetables!



Zucchini pie:
6 sheets of phyllo dough
A couple of potatoes
1 ripe zucchihi
Extra virgin olive oil
Spices: Vegeta & salt

Start with the filling:
Thinly slice potatoes and zucchini, sauté the vegetables in olive oil until the slices are softened and glazed. Place two of the phyllo- sheets on the bottom of a bread tin, brush with olive oil and layer half of the vegetables on top. Continue layering filo-sheets with vegetables until you have only one sheet left, this goes on the very top of the pie; brush with olive oil and sprinkle vegeta on top. Bake in a preheated oven at 175 C.

Serve with green lettuce, paprika and red onions (don't forget the salt!)
