Gotta love those berries!

When in doubt.. make a spongecake!

This golden, flavour rich cake is all you really need if you're having people over or if you're in the mood for something sweet!

Whip up a couple of eggs, add some sugar (ca. 1 dl per egg, or less depending on your preferences). Make sure that you taste the batter before adding the dry ingredients!

Dry ingredients: flour (plain, soy, rice corn or a mix of the above), baking soda (or powder), vanilla sugar. Mix the dry ingredients in a seperate bowl, then fold in into the egg/ sugar mix- (do not use a electric mixer! gently folding will make the cake airy and light and will help the baking powder to work its magic).

Pour the batter in a cake-tin of your choice (I used a small one because I wanted my cake to be 'high'). Add some berries of your choice, place it in a preheated oven (200 c) and bake until golden!

Flour and eggs...

...make a wonderfully crisp breakfast! I am very fond of a recipe called "eggs and flour" (something of a cross between a pancake and an omelet), which tend to I spice up with some vanilla sugar in the batter. Just add some icing sugar and blackberries to sweeten the pancakes when they are done, and you are all set for a yummy breakfast!

gotta love those blackberries..!

Quote of the day! (One of the funniest I ever heard)

"I've been all the way around this world. Trust me. Beautiful women are *everywhere*. They're just hiding from us guys, for reasons of sanity preservation."

Baklava feat. Schwarzwalder kirschtorte

Now here's something really special: a cross between a traditional baklava (this variation is made with mediterranean technique rather than the ones practised in the middle- east, thus is comparable to greek baklavas or yugoslavian "pita" (sweet pie made out of phyllo dough)) and Schwarzwalder kirschtorte (black forest cake- originally from Germany).

Made to a dear friend for her birthday, I give you;
Baklava feat. Schwarzwalder kirschtorte!

With a somewhat unorthodox decor-method...:D

...consisting of chocolate cremé, 2 types of sweet melon, chocolate icing and cherries.

Halfway through..!

All and all it was a succesful combination and our birthday girl was very fond of the cake, which is of course very, very important!

Huge thanks to you Maggie for an unforgettable birthday celebration!

Dinner time!

Bon Appétit tout le monde!

Cheese rolls, falafel, lettuce, olives (garlic/ chilli filling), fresh cantaloupe melon and garlic cremé is all you need to make this wonderful dish. The combination of the savory rolls, sweet cantaloupe and spicy cremé is what highlights the tastes!

Dinner time!

Todays menu:
Balkan styled zucchini & potato pie with fresh vegetables!

Zucchini pie:
6 sheets of phyllo dough
A couple of potatoes
1 ripe zucchihi
Extra virgin olive oil
Spices: Vegeta & salt

Start with the filling:
Thinly slice potatoes and zucchini, sauté the vegetables in olive oil until the slices are softened and glazed. Place two of the phyllo- sheets on the bottom of a bread tin, brush with olive oil and layer half of the vegetables on top. Continue layering filo-sheets with vegetables until you have only one sheet left, this goes on the very top of the pie; brush with olive oil and sprinkle vegeta on top. Bake in a preheated oven at 175 C.

Serve with green lettuce, paprika and red onions (don't forget the salt!)

International street market

One of the reasons why I adore food, is food markets! The vibrante atmosphere of these markets is something very special, it brings people together and with all of the colours, scents and tastes, it is a completely different experience than going to an ordinary supermarket.
Enjoy the spectra that is Linköping International street market 2010!

And something sweet to finish off this cavalcade of gorgeous pictures.. A German couple that started a small fudge factory in England had one of the biggest tents at the market today, consisting of fudges and candies with all the tastes you could ever imagine.. This is truly original, creative and absloutely IRRESISTABLE!

Salad galore

If you're like me (a real fan of salads that is), then you'll love this tip!: Make your salads more exotic, mix different types of tastes; sweet and savory makes an excellent combination.
Also, don't forget to experiment with different ingredients, dont limit yourself to the vegetable-section in the supermarket, open your heart to the idea of fruit, beans, nuts, seeds, onions, peas, pickles, etc.

Beautiful, Golden, Cupcaked Scones

My latest creation turned out to be very, very tasty and absolutely perfect for breakfast!

'How to':
Whip up a traditional batter for scones (or a non-traditional, consisting of added spices and a mix of flour-types; rice flour, corn flour, oat, etc...) Divide the batter into cupcake molds and bake in a preheated oven until the 'cakes' get golden and lovely.

Served with lemon, cinnamon & honey infused hot water.
