When in doubt.. make a spongecake!
This golden, flavour rich cake is all you really need if you're having people over or if you're in the mood for something sweet!
This golden, flavour rich cake is all you really need if you're having people over or if you're in the mood for something sweet!
Whip up a couple of eggs, add some sugar (ca. 1 dl per egg, or less depending on your preferences). Make sure that you taste the batter before adding the dry ingredients!
Dry ingredients: flour (plain, soy, rice corn or a mix of the above), baking soda (or powder), vanilla sugar. Mix the dry ingredients in a seperate bowl, then fold in into the egg/ sugar mix- (do not use a electric mixer! gently folding will make the cake airy and light and will help the baking powder to work its magic).
Pour the batter in a cake-tin of your choice (I used a small one because I wanted my cake to be 'high'). Add some berries of your choice, place it in a preheated oven (200 c) and bake until golden!
